We survived!!

So hubby and I survived our fast! We started eating turkey and other yummy things about two weeks ago, Super Bowl Sunday to be exact. Boy was it delicious to be able to eat like normal people again!!!
There are several things I noticed while on the fast and after the fast.
::While on the fast::
-I lost about 10 lbs. Yay!!!
-My face cleared up
-My morning breath was very mild (LOL)
-I slept so good!
-My digestion improved
-I didn't crave sweets

I'm sure there's more stuff I just can't remember now but anyway. Now that I've been eating more carbs and animal products my digestion has slowed down! My face has developed a few breakouts, etc. I haven't gained weight, don't intend to! I still have not eaten red meat, I used to be a lover of red meats but as I have educated myself in healthy eating my taste for it has diminished. I have not craved it and I'm afraid my body will have a bad reaction to it.

Comparing the before and after makes me want to start up again! But I love food too much and can't restrict too much off my diet! I eat pretty healthy as it is but I plan on staying away from certain things.

One of my favorite dinners I made while on the fast/diet was stir fry. I always use what I have on hand so it's a versatile recipe.

Vegetarian Stir Fry

1 package of extra firm tofu*
2 bell peppers cleaned (veins and seeds) and sliced
2 sliced onions
5 cloves of garlic, finely minced
Soy Sauce, low sodium
1 head of broccoli, trimmed
Salt and pepper to taste
Red pepper flakes optional

Start off by draining the tofu, if you get the extra firm it should have the consistency of a block of cheese, such as cheddar. Cut tofu in cubes and set aside.
On a large skillet/wok heat up 1/2 Tbsp of olive oil. Add the onions and cook until translucent, add peppers and cook for about 5-8 minutes, take out of skillet and set aside. Skillet back on stove at med heat, add 1/2 Tbsp olive oil, once hot add garlic and spread through the skillet, cook for 1 min. Add tofu, season with pepper and some red pepper flakes for some heat. Add about 2 Tbsp of soy sauce, or more. Add the rest of the veggies including broccoli, mix it all together and cook until the broccoli florets turn a bright green. This should only take about 3 minutes, no more than 5.

Serve hot of brown rice or farro.
